Kelly Turkeys is making use of its breeding hens with a new confit product designed to get the most out of the birds, which have a high fat content due to their age.
Krafted by Kelly Confit Turkey Thighs are pre-cooked and ready to heat and serve, and are being marketed as a great alternative for a Sunday roast or pull apart into rice and pasta dishes, or to shred into wraps with hoisin sauce and spring onions.
Paul Kelly said: “Like many of the classic cheaper cuts of meat, our breeding hens offer deliciously big flavours at great value. My mother, Mollie Kelly, has been a firm believer in beak-to-tail cooking her entire life. The whole animal is respected, which is a more sustainable, less wastend more nutritious approach to making meals.”
The Kelly breeding hens are grown to full maturity on the family farm, developing plenty of intramuscular fat. The fat bastes the meat from within to create succulent turkey. The new turkey thighs are individually boxed, £6.50 (400g) and are available from www.kellybronze.com now and Ocado from November 2023.
